Soak the dried fruits in apple juice and orange zest for 15 minutes.
Finely dice together with the walnuts. Add butter, eggs and honey and mix well.
Sift flour and baking powder together and mix with vanilla sugar, cinnamon and dry yeast. Add to the fruit mixture.
Spread on a baking tray lined with baking paper until about 1.5 cm thick.
Bake for approx. 20 minutes at 160 °C in a preheated oven. Allow to cool and then cut into rectangular bars.
Melt the coating and spray it on the energy bars using a zigzag pattern in a piping bag.
