„Scheiterhaufen“ (apple bread pudding)

Recipe for one baking dish (4-6 people)

Ingredients
  • 250 gr bread from the day before, cut into small pieces 
  • 200 ml organic milk
  • 3 tbsp cane sugar
  • 3 organic apples BONITA
  • 3 tbsp raisins
  • 2 tbsp hazelnuts grated or chopped

 

Ingredients for the glaze

  • 2 organic eggs 
  • juice and zest of half an organic lemon
  • 2 tbsp cane sugar
  • 200 ml organic milk
  • a pinch of salt
  • 1 tsp vanilla sugar
Preparation
Mix the milk with sugar, raisins and hazelnuts and pour over the bread. Let it soak a bit. Then mix in the peeled, deseeded and chopped apples. Pour the mixture into a buttered baking dish. Mix all the ingredients for the glaze and pour over the apple mixture. Bake in a preheated oven at 180 degrees for 20-25 minutes.
