For the batter, mix the milk, egg yolks, flour, butter and rum together well. Beat the egg whites with a pinch of salt until stiff and carefully fold into the mixture.
Remove the core of the apples with a corer and peel the apples. Cut into slices about 0.5 cm thick.
Mix the sugar with the cinnamon.
Heat the frying oil, dip the apple slices in the batter and fry until light brown on both sides. Drain on kitchen paper and sprinkle with the sugar and cinnamon mixture while still warm.
TIP: Serve with vanilla ice cream and/or vanilla sauce.
