Whisk the ingredients for the batter with a mixer and bake into thin omelettes in the hot, lightly buttered pan.
Peel the apples and cut into small cubes and mix with the pine nuts and the other ingredients.
Divide the filling between the omelettes, gather together and secure with a toothpick. Place on a baking tray, sprinkle with sugar and butter flakes and bake in the oven at 180° until the sugar caramelises. After baking, remove the toothpicks, arrange on plates, sprinkle with icing sugar and serve with cream and/or vanilla sauce.
TIP: Also tastes delicious with pears, apricots and peaches.
