Heat the milk with salt, sugar, vanilla pulp and lemon grated. Then add the rice and simmer gently. Cook "al dente" while stirring constantly.
In the meantime melt butter and let it brown.
Arrange the rice pudding in a bowl or on a plate, sprinkle with cinnamon and add brown butter.
TIP: also tastes delicious with grated half an orange. If you like, you can also add sultanas to the rice pudding towards the end of the cooking time.
