Basic recipe macaroon mixture
Beat 2 cold egg whites and 1 tsp lemon juice with the beaters of a hand mixer until stiff. Gradually add 130 g sugar and continue beating for one minute.
Continue to process according to the recipe.
Plum macaroons
For approx. 70 pieces
Stir in 8 drops of red food colouring (I will try it with plum jam). Fold in the plums and 1 tsp grated lemon zest. Using two damp teaspoons, place the mixture in 1.5 cm heaps on baking trays lined with baking paper.
Dry in a preheated oven at 130 degrees for about 40 to 50 minutes.
Leave to cool on the baking tray.
