Hut 3 - San Faustino di Garofolo Fausto

Caseificio San Faustino is our dairy located in the middle of Valle Camonica in Cividate Camuno. Every day we transform cow and goat milk in an artisanal way. Our cheeses are mainly made from raw milk and this allows us to maintain all the characteristics and aromas of freshly milked milk. We are committed to maintaining a short supply chain in order to guarantee our customers a healthy, safe and rich in properties product. Thanks to continuous growth and investments, we have managed to combine the ancient dairy art with the use of modern equipment to meet the highest quality standards without losing craftsmanship. We work with 100% green energy thanks to our partners.


In this hut you will find

We produce various types of both cow and goat cheese using raw milk from our valley. Our specialties are soft and creamy cheeses, both cow and goat, but no less so are the medium and long matured ones. During the year we also work to produce cheeses that we season and refine with alpine herbs and flower petals and then present them in the winter period where their tasting is more appropriate. In the summer we work with cow's milk that comes from a mountain pasture above 2000 metres, rich in floral aromas and straw-coloured.
